Seafood in Italy

Italy’s coastline runs for 7,600km (4,722 miles) and it’s no surprise they love their seafood. Each region specalises in it local catch. You can taste delicious shrimp, eel and clam popular on the north-eastern coast; mussels, octopus and a varity of fish by the south-eastern coast; and swordfish, sea bass, tuna and sardines along the western coast.

Ingredients

  • 500g cannellini beans
    canned or boiled
  • 1x can of tuna
    ideally packed in olive oil
  • ½ medium red onion OR 1x shallot
    finely diced
  • 1 Tablespoon capers
    rinsed of salt or drained if brine
  • 1 cup celery
    diced, taken from the center of the stalk including the leaves
  • ⅓ cup extra virgin olive oil
  • ½ lemon, juiced
  • A few sprigs of fresh parsley
    finely chopped
  • 3 cups rocket OR other leafy vegetable
  • Salt & pepper

Method

Step 1
If using canned beans, drain and rinse them thoroughly.

Step 2
Drain the canned tuna. Break up the fish pieces a bit with a fork.

Step 3
Mix together the beans, tuna, onion, capers, celery and parsley. Season with salt and pepper to taste.

TIP: MAKE AHEAD
All the above steps can be made in advance.

Step 4
Arrange rocket leaves on plate. Top with bean and tuna mix. Drizzle with extra virgin olive oil follow by lemon juice. Enjoy!
